Previously referred to as 'Australian Tawny Port', our Australian Tawny shows the classic caramel treacle colour of a tawny style. Delicious aromas of spicy fruit cake and raisins are immediate on the nose, while on the palate this fortified is luscious and intense with caramel and aged rancio flavours - a direct result of blending mature and younger wines. The wood maturation of this wine enhances the developed qualities of richness and intensity. This port shows sweetness balanced by the drying sensations derived from extended ageing in oak barrels, and a lengthy and lingering spicy finish
For many years, The Christian Brothers Cream Sherry has been a popular alternative to aperitifs and after dinner wines. With its full bodied caramelized character, Cream Sherry makes a wonderful complement to chocolate and sweet desserts, or it can be enjoyed as a smooth and mellow sipping wine throughout the evening.
Golden Sherry is a luxurious and mellow sipping wine that serves as the perfect companion to appetizers, nuts and cheeses. It refreshes the palate, while flavors of butterscotch and vanilla blend with highlights of apricot to create an exquisite medium-sweet taste.
Christian Brothers Tawny Port 750ml With its smooth and velvety taste, The Christian Brothers Tawny Port is an ideal complement to soft cheeses as well as rich desserts. Its intricate flavor suggests raspberries, chocolate and spicy baked apples. Several slightly warmed, its engaging cedar aroma and full body provide the perfect alternative to cognac. Or, served chilled, this wine complements the richest desserts.
Cockburn's Fine Ruby is a blend of young wines from various years, aged for three years in wood casks and bottled after filtration. With rich, full-bodied flavours of raspberry, plum and spice, it retains the red colour and fruit flavour of youth, and is ready to drink when bottled, offering a rich, fruity, sweet taste. Fine Ruby pairs well with blue veined cheeses, rich chocolate desserts - especially with raspberry sauce - or simply squares of dark chocolate and toasted walnuts.
Fine Tawny is aged for about the same amount of time as Cockburn's Fine Ruby (about three years), but in smaller barrels to hasten aging to a reddish amber (tawny) color and to develop a smoother, nutty flavor. Many of these wines are also left "upriver" in the Douro Valley to age in the hotter climate (the "Douro Bake"), thus speeding the aging process and lightening the color. Tawny port is bottled filtered and ready to drink. Tawny is a smoother, more mellow drink than Ruby.
Our Special Reserve still has the lusciously ripe, vibrant fruit of youth and lovely tannins, which give it the slightly peppery spice on the tongue. But it also has the elegance of age: the softness and smoothness that can only be achieved by slow ageing in old oak barrels. That’s what puts the Special in Special Reserve.
It pairs particularly well with cheese and other desserts. And it will stay good for up to six weeks once you’ve opened it.
